CHEESE CLOTH OR COFFEE FILTERS CUT UNTO 4 INCH SQUARES
KITCHEN STRING

MIX SPICES TOGETHER. PLACE ABOUT ONE TABLESPOON ON EACH SQUARE. TIE WITH STRING. USE ONE BAG PER 1 QT CIDER, APPLE JUICE, OR RED WINE FOR A SPICED DRINK. ALSO GREAT TO USE IN A SIMMERING POTPOURRI POT FOR A WONDERFUL AROMA.

HOT MUSTARD

21/4 CUPS SUGAR
11/3 CUPS DRY MUSTARD
6 EGGS, WELL BEATEN
11/3 CUPS WHITE VINEGAR

MIX TOGETHER SUGAR AND MUSTARD IN A LARGE SAUCEPAN. SLOWLY ADD EGGS AND VINEGAR; BLEND WELL. STIR CONSTANTLY WITH WIRE WHISK OR HAND BLENDER. COOK OVER LOW HEAT UNTIL THICK. PUT INTO 5 1/2 PINT STERILIZED JELLY JARS WITH LIDS. PROCESS IN BOILING WATER BATH FOR 15 MINUTES. LET COOL AND SEAL. REFRIGERATE AFTER OPENING A SEALED JAR.

RANCH DRESSING DIP MIX

11/2 TABLESPOONS DRIED PARSLEY
1 TABLESPOON SALT
1/2 TABLESPOON DRIED CHIVES
1/2 TABLESPOON DRIED OREGANO
1/2 TABLESPOON DRIED TARRAGON
1/2 TABLESPOON GARLIC POWDER
1/2 TABLESPOON BLACK PEPPER
1/2 TABLESPOON DRIED CILANTRO

COMBINE INGREDIENTS AND PLACE IN AN AIRTIGHT CONTAINER.

MIX TOGETHER THOUROUGHLY AND REFRIGERATE UNTIL USE.

1/3 CUP DRIED MINCED ONION
1/4 CUP DRIED CHIVES
1/2 CUP CHILI POWDER
1/4 CUP CUMIN POWDER

2 TABLESPOONS GARLIC POWDER
2 TABLESPOONS DRIED CILANTRO

MIX TOGETHER THOROUGHLY AND PLACE IN AN AIRTIGHT CONTAINER.

1 CUP MAYONNAISE
1 CUP SOUR CREAM

MIX TOGETHER THOROUGHLY AND REFRIGERATE UNTIL SERVING.

REFRIGERATE FOR 2 HOURS. KNEAD IN YOUR HAND UNTIL WORKABLE. ROLL OUT ON A BOARD BETWEEN WAXED PAPER. USE COOKIE CUTTERS TO MAKE SHAPES. USE AN ICE PICK TO MAKE HOLES IN THE TOP FOR RIBBON.

MIX INGREDIENTS TOGETHER IN A LARGE COVERED CONTAINER. USE 1/3 CUP PER 8 OZ MUG OF HOT WATER OR COFFEE. POUR INTO JARS FOR GREAT GIFTS.

APPLE BUTTER

1/2 GALLON APPLE CIDER
7 LBS JONATHAN APPLES
4 CUPS SUGAR
3 T CINNAMON
1 t NUTMEG

PEEL, CORE AND CUT APPLES INTO QUARTERS. PREBOIL APPLES IN WATER FOR 30 MINUTES. DRAIN. PUT ALL INGREDIENTS IN A LARGE POT. SIMMER SLOWLY; STIRRING OFTEN. CONTINUE FOR 3 HOURS OR UNTIL THICKENED. PUT INTO STERILIZED GLASS 1/2 PINT JARS. LET COOL AND SEAL. YIELD 13 1/2 PINTS.

1/2 CUP BROWN SUGAR
1 CUP BUTTERMILK
1 EGG
1/4 CUP OIL
1 CUP FLOUR
3 t BAKING POWDER
1/2 t BAKING SODA

1/4 t CINNAMON
1/2 CUP PECANS (OPTIONAL)

COMBINE FIRST 5 INGREDIENTS. SIFT TOGETHER DRY INGREDIENTS AND ADD TO WET MIXTURE. MIX. ADD NUTS. POUR INTO GREASED MUFFIN TINS AND BAKE 25 MINUTES.
